Ingredients:
mocha 1 to kochi dekhe,
150gm chhoto chingri chharano,
1ti medium alu,
5 tbsp tel, 1tbsp ghi,
1tbsp ada bata,
1tsp dhane, 1tsp jire, 1tsp lankaguro, 1/2 tsp halud,
1/2 tsp garam maslaguro,
salt pariman moton, 1tsp chini,
phoroner janye 1/2 tsp asto jire, 2 ti kare darchini(1inch), chhoto elach o labango,
2 ti tejpata,
narkel kora-1/3 cup (optional).
Method : mocha kete kuchiye jale samanya halud diye 4-5 ghanta bhijiye rakho. chingri machh chhariye parishkar kore nun-halud makhiye 1tbsp tel garam kare samanya bheje tule nao. alu khub chhoto chhoto kare kete rakho. kete rakha o jale bhejano mocha bhalo kare haat diye kachle or kas ta bar kare abar jale dhuye strain kore nao. erpar jale samanya nun diye bhapiye nao. pressure cooker hole ekta ba duto steam diye bandho kore diyo. thanda hole mochar jal jhoriye haat diye bhalo kore chatke niyo.
eibar korhaite tel ta garam kare asto garam masla, jire o tejpata dao. sugandho berole ote alu diye bhajo medium heat e dhaka diye. alu pray naram haye asbe takhan ada bata o anyanya mashla diye kashte thako, nun dao pariman moton. eibar mocha seddha diye narte thako, prayojon hole aar ektu ada,dhane-jire dite paro. 5 min moton rakhbe. bheje rakha chingri machhgulo diye mishiye dao. 2 min rakho. eibar aar ekti frying pan e ghi ta garam kare ote garam maslata ektu bheje mochate dhele dao. opare narkel kora chhoriye paribeshan karo.

Ranga Alur Puli :

1. At the start- Making the filling. The Ranga Alu (sweet potatoes/ garnet yams) are boiling in the back. They will be peeled and mashed. For the filling we have 1 tablespoon of ghee, 1 cup of grated unsweetened coconut, 1/2 can condensed milk and 2 tablespoons Succanat. Use Gur or jaggery instead.
2. Mix all the filling ingredients in the pan and cook at medium heat, stirring frequently.

3. Continue to stir constantly as the mixture thickens.

4. The filling thickens and becomes aromatic. Allow to cool and thicken further. Separately take the mashed sweet potatoes (Ranga Alu) and add enough flour to make a medium firm dough. Add a tablespoon sugar if desired (I usually don't)

5. Make a thin syrup of 3/4 cup sugar to 2 1/2 cups water and boil down to about 2 cups. Set aside to cool. Oil hands. Take a palmful of the mashed sweet potatoes, shape into an oval, place about a tablespoon of the filling and fold the dough to close. Fry in about 1 inch of white oil like Canola, on medium heat- till golden. Place in the syrup while warm.

Sweetened Condensed Milk- 2 small cans...
Method :

. Mix both the ingredients and blend nicely in the blender.
2. Pour the mixture in an ovenproof dish.
3. Bake for about an hour at 250 degrees Fahrenheit.
4. Remove from the oven, let it cool, and then refrigerate.
5. Now enjoy ..

Ingredients :
500 gms minced meat
1 tsp holud powder
2 bodo Peyaz,chopped
3 tbsps ghee
6 cloves roshun, chopped
350 gms refined Maida
4 Kacha lonka, chopped
Nun swadmoto
1 bunch dhonepata, chopped
Ghee/Tel for deep frying
Method : Mangso te onions, garlic, chillies and coriander leaves diye ghee te bhalo kore nere nao, salt and nun dao jate bhalo kore cook hoe jae aar meat ta dry and tender hoe jae. Keep aside. Moida ta olpo nun aar 1 tbsp ghee diye bhalo kore mekhe nao. Divide kore choto balls banao . Roll out each ball, about 3 inches in diameter. Cut into half and form cones. Dampen the side edges and press together. Full in the mince mixture and seal carefully. Deep fry in hot ghee on a low fire till light brown.Serve with tomato sauce/poodina chutney!

Cheese Pakora :

2 big potatoes – 3/4th boiled and cut into thick slices (gol gol)

Mince preparation:
Oil –500 g mince -
1 big onion – finely chopped
Loads of garlic - crushed
2 carrots – in small cubes
3 med tomato – pureed
Italian herbs
Salt pepper
Method : Prathame tel garam kore – tate onion bheje nao, put garlic and fry until they turn soft. Add carrots and mince, fry until meat is cooked, add tomato puree and cook for 45 mins – add water if necessary. Season well with salt, pepper and Italian herb.
